Have you ever Tasted a Purple Carrot?

This time of year, carrots are still growing here in Arizona and we’re enjoying them from the farmer’s market.  While I’ve been eating carrots most of my life, it has been in the last few years that I’ve found the multi-colored carrots.

So, what’s so great about carrots?

Carrots really are good for your eyes!  A great source of lutein and zeaxanthan, which show promise  in protecting the eyes and helping to prevent mascular degeneration and cataracts.

Carrots may be grounding energetically. Since carrots are roots that grow down in to the ground, like other root veggies, they may be grounding.

Carrots satisfy sweet cravings. Especially when cooked, carrots are so sweet. So, eat a carrot a day.

Carrots are versatile. Eat them raw. Roast carrots with other root veggies. Juice carrots with some greens.

Take a look…the unexpected beauty of cutting into a purple carrot!
